Job Description Position: Culinary Director At Rusic Bakery we strive to give our fast-casual guest a full service expericence. Focusing on the freshest organic ingedients, along with delicious coffee, baked goods and superior customer service. We have 4 locations and a commissary kitchen and bakery in Marin County and are looking for someone to help us grow. Work/life balance is valued. We offer competeive pay and many perks! Essential Duties and Responsibilities The essential functions include, but are not limited to the following: Development and execution of all menu items Responsible for Interviewing, hiring for Commissary Kitchen positions. Hires, trains, develops, and evaluates personnel on proper use of kitchen equipment & tools, techniques, and skills. Ability to relieve, assist, or fill in for any kitchen position as needed. Observe workers to ensure that methods of cooking, garnishes, and portion sizes are as prescribed. Ensure that high standards of sanitation, cleanliness, and safety are maintained throughout kitchen areas at all times. Establish controls to minimize food waste and theft. Determine if and/or when policy or procedural infractions by employees occur and issue the appropriate level of progressive discipline. Maintain a professional, neat, and well-groomed appearance, adhering to appearance standards. Establish and maintain regular cleaning, maintenance and repair schedule for all kitchen areas and equipment. Constantly monitors invoices and works with vendors for best pricing. Supervise kitchen leads at each location, working to develop leadership skills, training them to uphold kitchen standards Monitors kitchen inventories ensuring proper par levels are in place and procedures are being followed - FIFO Monitor portion control of menu ingredients, train and observe menu item production Communicate effectively with GMs as to new or returning menu items Train kitchen leads on new and returning menu items in a timely fashion ensuring their complete understanding and confidence in training their line cooks Monitors kitchen for cleanliness and health department standard Minimum Qualifications (Knowledge, Skills, and Abilities) Culinary or Hospitality Degree preferred Previous management experience required Familiarity with Microsoft Office Experience in Pastry and/or Bread production a plus Availability to work varied days and hours needed to accomplish these duties Strong time management skills and attention to detail Employment Type: Full Time Salary: $70,000 - $90,000 Annual Bonus/Commission: Yes
